Ximxim (Brazilian Chicken and Shrimp Soup)

The addition of peanuts and dried shrimp make this traditional peasant soup from northeastern Brazil one not to be missed. Perfect for a rainy spring evening meal or anytime for that matter. We hope that you will enjoy!

Cuban-Style Black Bean Soup

My friend Jose once told me that this soup reminded him of his youth spent in Havana. I think he was yanking my chain a bit, however, seeing as how he is Cuban and all… I’ll accept his compliment. Made in the traditional manner, this protein packed selection is the perfect easy meal!

Ingredients:Black beans, onions, green bell peppers, chili peppers, cumin, oregano, cilantro, garlic, tomatoes, EVOO, vegetable stock, kosher salt and freshly cracked black pepper

A heaping spoonful of sour cream, green onions and a splash of Tabasco would do the trick.

Mi Salsa Favorita (My Favorite Salsa)

I’ve been making a variation of this salsa for years now and it is still one of my very favorites. Somewhere between a salsa and a sauce, once again we manage to capture the very best that these minimal ingredients have to offer in order to make your fiesta come to life. Perfect for noshing with freshly fried tortilla chips and sipping on a teeth cracklin’ cold one with your amigos!

Ingredients: Roasted tomatoes, tomatillos, roasted red peppers, onions, garlic, jalapeno, chile de arbol, cilantro, lime juice, tomato juice, sugar, toasted cumin, extra virgin olive oil, kosher salt and freshly cracked black pepper.

Chicken Stock

Traditional, homemade chicken stock!
