Posole Rojo (Pork and Hominy Stew with Red Chili)

Still one of my favorite soups to make and to eat as well. This hearty bowl of goodness combines slowly braised pork shoulder, tender hominy and a spicy red chili broth. The broth can lean a bit on the thin side to leave room for the traditional garnishes. We hope you will enjoy!

Ingredients: Pork shoulder, onions, garlic, hominy, red chili, tomato, cumin, oregano, chicken stock, kosher salt and freshly cracked black pepper

Go the distance, treat yourself and have the traditional garnishes. You and your family deserve it! Shredded cabbage, radish, lime, avocado and freshly chopped cilantro.

Roasted Green Chili and Sweet Corn Chowder

Now I’m certain that I’ve made this before with fairly great success. Freshly roasted poblano peppers combined with sweet corn are not only make a fantastic combination, but also they also create the base for this soul satisfying soup selection perfect for an easy meal. We hope that you will enjoy!

Ingredients: Poblano peppers, sweet corn, potatoes, onions, roasted garlic, toasted cumin, thyme, oregano, cream, milk, butter, flour, vegetable stock, kosher salt and freshly cracked black pepper

Would pair wonderfully with either roasted chicken or thick cut bacon as a garnish.

Perhaps the perfect accompaniment to this week’s soup selections. Tangy tomatillos blended perfectly with ultra smooth avocados, and finished with pungent chili peppers, cilantro and lime. This one is not to be missed!

Chicken Stock

Traditional, homemade chicken stock! (insert reference about “how grandma used to make it”) Works wonderful as a base for your own soups and stews, and doubles a great item to have around for those sudden colds or bouts of sickness. This stock is the real deal, and isn’t saturated with ungodly amounts of sodium and preservatives like the store bought kind. Plus, we add a few marrow bones in the cooking process to thicken it just a touch and supercharge it with the healthy benefits of marrow!
