Moroccan Meatball Soup with Israeli Couscous

Tiny Moroccan spiced meatballs combined with Israeli couscous, a light broth and finished with a bit of fresh mint. A perfectly satisfying soup for an early spring evening. We hope that you will enjoy!

Ingredients: Onions, garlic, tomato paste, harissa, vegetable stock, Moroccan meatballs (ground lamb, coriander, cumin, curry powder, oregano, thyme, chili powder, dry mustard, cinnamon, tomato paste), fresh mint, kosher salt and freshly cracked black pepper

Suggested garnish: Chopped toasted almond and a small spoonful of harissaSuggested beverage: A delicious I.P.A.

The Algerian Jewish Grandmothers Soup is back! I’m certain that there are as many versions of this soup out there as there are Algerian Jewish Grandmothers. Our version is one that our friend David Ansel shared with us, from his book, Slow and Difficult Soups.

Ingredients: Tomato, zucchini, onion, lemon juice, cilantro, olive oil, garlic, kosher salt and freshly cracked black pepper

Suggested garnish: A dollop of thick yogurt and freshly chopped dill

Suggested beverage: A lovely Sauvignon Blanc

Lemony Red Lentil Soup

This wonderful lentil soup is a staple throughout Lebanon. Slowly cooked lentils, carrots, tomatoes and spices are combined then finished with a generous squeeze of fresh lemon juice. Winter, no more!
