Zucchini-Basil Soup with Toasted Walnuts
I would normally reserve this soup for the late summer months, when zucchini is at it’s peak. However, history has shown that by late summer, everybody I know is fed up with zucchini in all of its variations.  So without further ado, we would like to re-introduce and encourage your love and appreciation for zucchini. We hope that you will enjoy, you zucchini pioneers, you!

Ingredients: Zucchini, onions, potatoes, roasted garlic, basil, lemon, walnuts, vegetable stock, flour, evoo, heavy cream, kosher salt and freshly cracked black pepper

Suggested garnish: A drizzle of fruity extra virgin olive oil and freshly grated Pecorino Romano Pepato

Armenian Apricot Soup
The apricot gets top billing in this soup title and I’ll be the first to admit they certainly help to create this unique spring soup selection. However, the true rockstar vegetable of this soup is the carrot.  As with an early harvest, you’ll be unable to deny the delicious sweetness of the carrots when combined with the other key players.  This light, brothy puree is perfect for the beginning of any springtime supper!
