Pumpkin-Rice Laksa Soup with Toasted Coconut

Our take on the popular, spicy Indonesian soup, only with basmati rice instead of thin noodles. Just the thought of the wonderful aromas filling our kitchen when making this delicious concoction would make any soup maker giddy. Sweet winter pumpkin, fragrant herbs, toasted spices and a healthy splash of coconut milk make this selection a crowd pleaser at any family table.

Ingredients: Winter pumpkin (not the Jack-o-Lantern kind), onions, chilies, lime, ginger, garlic, coriander, lemongrass, cumin, yellow curry, cilantro, coconut, coconut milk, vegetable stock, kosher salt and freshly cracked black pepper

Serve with freshly chopped cilantro, toasted coconut and a squeeze of lime. Probably pairs nicely with a Riesling or perhaps a Boulevard Brewing Co. Pop Up I.P.A.

“Chicken and Stars” (Traditional)

Bring out the inner kid in yourselves this week with our selection of the classic, Chicken and Stars! We’ll start with a rich, homemade chicken stock laced with Parmigiano-Reggiano (the undisputed king of all cheeses) and toss in a traditional mirepoix of celery, carrot and onion and finish with chunks of tender poached chicken breast, fresh herbs and of course…tiny, little stars. Grab a few extra to freeze, you’ll thank us later.

Ingredients: Onions, celery, carrots, chicken breast, garlic, star shaped pasta, Parmigiano-Reggiano, flat leaf parsley, thyme, chicken stock, EVOO, kosher salt and freshly cracked black pepper

Serve with crusty warm bread, soft butter and sea salt. Might pair nicely with a Pinot Grigio.

Roasted Celery, Leek and French Green Lentil Soup

Quite simply…French soup at it’s finest and delicious. Petite green lentils simmering  in a light chicken broth alongside onions, fresh leeks and roasted celery. Roasted celery? Really? Yep, that’s right. Roasted celery is the backbone of this selection that makes this one not to be missed. We hope that you will enjoy!

Ingredients: Onions, celery, leeks, lentils, roasted garlic, dried oregano, EVOO, dry vermouth, chicken stock, kosher salt and freshly cracked black pepper

Serve with a toasted crouton smeared with Green Dirt Farms Fresh Cheese with Nettles. I’d go with a French white wine to accompany.
